Step 1
Cook Bacon, reserve fat and set aside
Caramelize onions in butter in separate pan while cooking tilapia. Brown tilapia in bacon fat pan, until almost done. Set aside. Add onions, bacon, cherry tomatoes, lemon juice, 1-2 tbl butter, capers, wine and sauté 3-5 min until tomatoes soft and sauce thickened. Taste sauce and adjust lemon. Add tilapia back in and simmer 1-2 min. Serve over rice or pasta.
