Ingredients

1 tablespoonolive oil
1onion
chopped
3cloves garlic
minced
1 tablespoonginger paste
1 tablespoongaram masala
1 teaspoonground cumin
1 teaspoonground coriander
1 teaspoonsalt
½ teaspoonground red pepper
2cans chickpeas
1 x 28 ozcan crushed tomatoes
1can coconut milk
1 packagepaneer
basmati rice
fresh cilantro
chopped, optional for serving
Instructions
Step 1
Heat oil in large saucepan over medium-high heat. Add onion; cook and stir 5 minutes or until translucent. Add garlic, ginger, garam masala, cumin, coriander, salt and red pepper; cool and stir 1 minute. Stir in chickpeas, tomatoes and coconut milk.
Step 2
Reduce heat to medium; simmer 30 minutes or until sauce has thickened and chickpeas have softened slightly.
Step 3
Add paneer; stir gently. Cook 7 to 10 minutes or until paneer is heated through. Serve over rice; garnish with cilantro
