Ingredients

2 Tbspextra virgin olive oil
2carrots
chopped
2celery stalks
chopped
1onion
medium, chopped
4garlic cloves
minced
2 ½ cupschicken stock
¼ cupdry white wine
optional
4 oztomato paste
1 x 28 ouncecan diced tomatoes
1 tablespoonbalsamic vinegar
optional
1 ½ teaspoondried oregano
1 ½ teaspoondried basil
red-pepper flakes
½ teaspoonkosher salt
plus more as needed
12 ozItalian chicken sausage
cooked and sliced
2zucchini
medium, chopped
5 ouncesbaby spinach
½ cupgrated parmesan cheese
Instructions
Step 1
Cook pasta, drain, and set aside
Step 2
Heat olive oil over medium heat in a large stockpot
Step 3
Add onion, carrot, celery, and saute until softened
Step 4
Add garlic, saute for 30 seconds
Step 5
Add tomato paste, salt and spices, saute for 3-4 minutes
Step 6
Add chicken stock, wine, vinegar, and tomatoes with juices; bring to a boil then simmer for 20 minutes
Step 7
Add zucchini and cook until tender-crisp; about 4 minutes
Step 8
Add pasta, sausage, and spinach
Step 9
Serve topped with parmesan cheese and with a side of crusty bread
