For 7 quartered chicken
8-inch ginger, sliced
1 bunch scallions
2 chicken cubes
Boil, then simmer for 15 to 20 mins
Fry ginger and garlic, set aside portions for rice and sauces
Basting sauce:
1/2 cup water ,
2 tbsp Sugar,
Almost 1/2 cup soy sauce, then broth.
Lay , baste chicken on sauce
Remaining basting sauce, add oyster sauce, broth, and ginger garlic
COOL down broth to room temp
Saute grains with ginger garlic. If 3 rice, then 6 broth. Add more during simmering, mix rice too
