Creamy aubergine curry

Aubergines are filling and very low in calories, but they can be bland. Adding them to a curry is the perfect way to pep them up.

Instructions
Step 1
Whizz the onions, ginger, almonds, curry powder and coriander stalks until pulpy (add a splash of water if needed).
Step 2
Boil the kettle.
Step 3
Heat the oil in a pan, then fry the aubergine for 5 minutes until browned.
Step 4
Scoop out and set aside.
Step 5
Add the onion paste to the pan, then cook for a few minutes, stirring, until softened.
Step 6
Return the aubergine to the pan with the yogurt and 400ml/15fl oz hot water.
Step 7
Stir, then simmer for 10-15 minutes until the aubergine is tender.
Step 8
Season, then serve over basmati rice, scattered with the coriander leaves and extra almonds, if you like.
