Ingredients

1 Tbspoil
2 tspmustard seeds
2onions

10garlic cloves

3tomatoes
chopped
2 tspground cumin
2 cupssplit fava beans
dry, soaked overnight
1stock cube
5 cupswater
½ cupfresh parsley
coarsely chopped
½ cupfresh coriander
coarsely chopped
¼ cupfresh dill
coarsely chopped
3 tsppaprika
3 tspdry mint
1 tspground black pepper
1 tspgaram masala
2 Tbspoil

Instructions
Step 1
Heat the oil over medium.
Step 2
Add the mustard seeds and cook until they splutter.
Step 3
Add the onions, garlic, tomatoes and cumin and cook for 5 minutes, until softened.
Step 4
Add the beans and stock, bring to a boil then simmer for about an hour, adding more water if needed, until the beans are tender.
Step 5
Season the mixture with paprika, mint, pepper, garam masala and stir in the fresh herbs.
Step 6
Using an immersion blender, purée the mixture until smooth.
Step 7
Heat the oil over medium and cook the sliced onions for 10-15 minutes, until golden brown and caramelized.
Step 8
Or alternatively, coat the onion slices with the oil and cook in a preheated oven or an air fryer, until golden brown and crispy.
