Ingredients

2 tablespoonolive oil
0.5 lbbacon
or fatty ham, diced
1onion
small, diced
2 clovesgarlic
crushed
1 x 28 ozcan diced tomatoes
undrained
2 x 15 ozcan black-eyed peas
drained and rinsed
3 cupswater
1 Tablespoonbeef
or crystal/cube equivalent
¼ cupjalapeño peppers
from jar, chopped
½ teaspoonground cumin
½ teaspoonchili powder
¼ teaspoonground coriander
1 tablespoonwhite vinegar
1 bunchkale leaves
washed and cut into 1-inch pieces
1 cupmonterey jack cheese
shredded
2 cupsrice
cooked
Instructions
Step 1
Heat the olive oil in a large soup pot at medium heat. Add the bacon or ham and cook for 2-3 minutes.
Step 2
Add chopped onions and garlic. Cook for 2-3 minutes or until onions begin to soften.
Step 3
Add diced tomatoes with juice, water, bouillon, black-eyed peas, jalapeño, vinegar, cumin, chili powder and coriander. Stir, then cook uncovered over medium heat for about 15 minutes.
Step 4
Stir in honey and kale. Cook another 10 minutes.
Step 5
Serve over rice with grated cheese on top.
