Step 1
Crumble the cooked leftover rice.

Crack eggs into a bowl and beat until uniform in color

Dice meat
Step 4
Chop scallions

Heat frying pan over medium high heat.

Add oil to pan and swirl to coat

Add egg to pan. Let the edges cook up a bit before scrambling

Add rice before egg is fully cooked
Step 9
Break up egg & rice with wooden spatula until no big clumps remain

Toss in meat until well distributed

Season evenly with salt and pepper

Toss to distribute. Shove arm up and out like you're about to toss the pan to someone. A quick upward flick of the wrist flips the rice flip from the top to the bottom.

Pour soy sauce around the rim of the pan.

Toss pan to coat rice with soy sauce until uniform in color

Drizzle sesame oil for color

Add in chopped scallions for color

Toss a few more times to complete
