Instructions

Step 1
Soak rice in cold water for one hour, rinse and set aside; Prepare and slice Shiitake mushroom into thin slices, further slice scallion, ginger as well as veggie of your choice into small pieces.
Step 2
Cut shrimp head off and peal shrimp, keep shrimp head and shell in a bowl. Devein shrimp and keep the cleaned shrimp in separate bowl.
Step 3
Add cooking oil in a heated sauce pan, put shrimp head and shell in the pan. Stir to cook and sauté on medium heat for a few minutes until the shrimp juice comes out bright red/orange (Add in cooking wine during the sauté process). Further add in water, bring to boil, simmer for a few minutes before removing shrimp head and shell from the broth.
Step 4
Add pre soaked rice in the shrimp broth, further put in sliced ginger and shiitake mushroom as well as peanut butter, stir to simmer on medium for about 30 minutes ( adjust the heat towards the end).
Step 5
Once broth starts to dry out (watery texture is also ok depending on personal preference), add in shrimp to cook, further season with salt and black pepper, stir and add in sliced veggie to mix. Garnish with chopped scallion, serve warm.
