Instructions

Step 1
Wash and soak basmati rice. Keep aside for 20 minutes.
Step 2
Take a kauai or cooking pan or pressure cooker with a heavy base. Add ghee and oil.
Step 3
Saute all the whole spices, cashews, raisins, ginger-garlic paste, sliced onions till it becomes golden brown. Add green chillies as well.
Step 4
Add green peas and fennel powder along with coriander powder till the raw smell goes.
Step 5
Add soaked basmati rice, salt as per taste and mix well. For 1 cup of basmati rice; add 2 cups of water or coconut milk. Cook for 25 mins.
Step 6
Once the water is evaporated, rest the pan for 10 mins for setting. Serve hot with raita or pickle.
