Instructions

For the cheesecake

Step 1
Weigh all the ingredients
Step 2
Juice the lime
Step 3
Add the soaked cashews, coconut milk, coconut syrup and lime juice to blender.

Blend until smooth - about 30 seconds

Add in the melted and cooled coconut oil while the blender is running.

Transfer to mixing bowl with a spatula.

Check seasoning and add more lime juice or coconut nectar to balance if necessary.

Separate the mix into 2 mixing bowls.

Add the cacao to one bowl and whisk to incorporate.

Cheesecake mix are ready to add into moulds or glasses.

For the base

Assemble all ingredients.

Remove stones from dates.

Add dates, nuts and oats to blender.

Blend until mix comes together.

Transfer to mixing bowl.

Add the tahini, coconut oil and orange zest.

Mix is now ready to assemble cheesecake.

To assemble cheesecake

Add the base mix to a glass or mould. Pack down tightly.

Next pour in the white cheese cake mix. allow to set in the fridge or freezer for 20 minutes.

Next, pour over the chocolate cheesecake mix.
Step 21
Transfer to fridge to set up for at least 12 hours.
