Instructions

Step 1
Preheat the oven to 350 degrees. Line a baking tray with baking paper.
Step 2
Cut the cauliflower into florets and pulse in a food processor until it forms a rice-like consistency or use store-bought cauliflower rice.
Step 3
In a mixing bowl combine the cauliflower rice, olive oil, parsley, curry powder and season generously with salt and pepper.
Step 4
Add the whisked eggs to the bowl and mix well to combine.
Step 5
If using a bag of cauliflower rice after mixing all ingredients place in food processor to make it more like a paste.
Step 6
Cover a small plate with ¼ cup of almond flour. Using your hands, take a small handful of mixture and roll it into balls. The mixture should make about 5-6 balls.
Step 7
Spray or drizzle olive oil over the top of the balls and place them on the prepared baking tray. Bake them in the oven for 25 minutes or until they're golden.
Step 8
Sprinkle with parsley and serve them with hummus or over tomato sauces
