Ingredients

14 oztofu
crumbled
1can vegetarian refried beans
½ cupfrozen corn
½ cupsalsa
1 Tbsptaco seasoning
8flour tortillas
taco size
½ cupgreen taco sauce
1 cupenchilada sauce
avocado

Instructions
Step 1
Preheat oven to 350
Step 2
Drain and crumble tofu then add taco seasoning
Step 3
In separate bowl, mis refried beans with the corn and salsa
Step 4
Add seasoned tofu to bean/corn/salsa mixture and stir up
Step 5
Heat tortillas in microwave for 15 to 20 seconds
Step 6
Add 1-2 spoonfuls of green taco sauce to middle of each tortilla, then add a scoop of the bean and tofu mixture
Step 7
Roll tortillas up and place seam-side down in 9x13 glass baking dish
Step 8
Pour enchilada sauce on top to completely cover enchiladas and bake for 20 minutes
Step 9
Before serving, top enchiladas with avocado, cheese, or other toppings
