Instructions
Step 1
Prepare your ingredients - quarter tomatoes and season, smash garlic cloves, finely dice red onion, pepper, avocado, and cucumber.
Step 2
Saute tomatoes and garlic in olive oil for 8-10 minutes in a dutch oven or heavy bottomed pot.
Step 3
Add in chicken broth and boil for about 20-25 minutes.
Step 4
Use an immersion blender or food processor to blend mixture until smooth.
Step 5
Place tomato soup in the fridge or freezer until chilled.
Step 6
Add in diced red onion, pepper, avocado and cucumber. Add juice of 1/2 of a lime and adjust seasoning as needed.
Step 7
Top with cilantro, a drizzle of olive oil, and flakey salt to serve.
