Instructions

Step 1
1. Cook the nopales using your preferred method.
Step 2
2. Boil 4 tomatoes, jalapeño, garlic cloves, and 1/4 of the onion until the tomatoes have blistered.

3. Once done, blend the boiled vegetables with 2 tbsp salt. Put to the side.
Step 4
4. Chop the remaining tomatoes, onion, and jalapeño. Chop the pork into 1 inch cubes.
Step 5
5. In a greased pan,cook the pork for 4 minutes or until golden brown.
Step 6
6. Add in the onion and jalapeños and cool for 4 additional minutes.
Step 7
7. Add in the tomatoes, frozen corn, and salsa.
Step 8
8. Combine well, cover, and cook for an additional 10 minutes.
Step 9
9. Add in the cooked nopales, seasonings to taste, and cilantro.
Step 10
10. Mix well and divide into 4 servings. Each serving will be about 2.25 cups of pork mixture.
