Ingredients
6 servings

1onion
small, diced

4garlic cloves
minced

1red bell pepper
diced

1jalapeno
diced

1 Tbspcumin

1 Tbspchili powder

6 cupslow sodium chicken broth
or bone broth

1can rotel
not drained

1can mexican corn
not drained

1can black beans
rinsed

1.5 poundsrotisserie chicken
or precooked, shredded chicken, roughly shredded

½ cupdry quinoa
or white rice

tortilla chips

avocado
for serving

mexican cheese
grated, for serving
Instructions
Step 1
Add a splash of cooking oil to a large soup pan. Add onion, garlic, peppers, cumin and chili powder and saute for about 10 minutes on medium heat.
Step 2
Add all other ingredients except quinoa/rice and tortilla chips. Bring to a boil.
Step 3
Add quinoa/rice and a couple handfuls of finely crushed tortilla chips. Stir, reduce heat to simmer and cover for 15 minutes.
Step 4
Serve with more tortilla chips, avocado and grated cheese.
