Ingredients

120gflour
60mlwater
310gpigeon peas
1clove garlic
chopped
1 bunchChive
2stalks celery
chopped
45gpumpkin
diced
40gsweet potato
diced
45gpotato
diced
35gcarrots
diced
45gplantain
diced, optional
960mlstock
2 tspsugar
1hot pepper
120mlreduced-fat coconut milk
or 3 tablespoons coconut powder
2 stalksfresh thyme
4cloves
Instructions
Step 1
For Dumplings
Step 2
Add water to flour and mix
Step 3
Separate into small balls or long thick logs
Step 4
For Soup*If using dried pigeon peas, boil peas with garlic until soft and set aside*
Step 5
Heat a deep pot, add oil and saute onions and garlic until translucent
Step 6
Add celery, thyme, chive to pot and saute
Step 7
Add and saute pumpkin and carrots
Step 8
Add pigeon peas to pot and incorporate (mix about a minute)
Step 9
Add cloves, pepper, coconut milk and stock
Step 10
Add sweet potato, potato and plantain if using
Step 11
Bring to a boil and leave to simmer for about 30 minutes
Step 12
Add dumplings
Step 13
When dumplings have floated to top add sugar and salt and pepper to taste
Step 14
Serve hot
