Instructions

Step 1
Soak dried mushrooms
Step 2
Heat pan with 1 tbsp oil. Add the mushrooms and a pinch of salt and fry until all the moisture has gone.

Remove mushrooms from pan
Step 4
Add the remaining oil, the onions, garlic, carrots and celery to the pan. Stir well. Cover the pan and cook for 10 mins until veg has softened

Add the herbs, celery salt and tomato puree
Step 6
Drain the dried mushrooms, chop them. Add them to the ragu with the strained liquid
Step 7
Add the cooked mushrooms back into the pan
Step 8
Add the chopped tomatoes and bring to a simmer. Cook for 30 mins until thick
Step 9
Serve with pasta
