Step 1
Preheat the oven to 200°C / fan 180°C / Gas 6

Step 2
Put most of the coriander in a large bowl, reserving a few chopped leaves. Add the beef, curry powder, carrots, sweetcorn and a little seasoning. Mix well and divide the mixture into 24 equal-sized balls
Step 3
Arrange the kuftas on a baking tray, spaced well apart, spray with low-calorie cooking spray and bake for 25-30 minutes or until cooked through and beginning to brown
Step 4
Scatter with the remaining coriander to serve
