Shredded Chicken Quesadillas

Flavorful, handheld chicken quesadillas are a great quick meal that takes just minutes to prep and a few more to create after cooking. A family favorite, this chicken can be used in lettuce wraps, tacos, or for nachos too!

Instructions
Step 1
To a crock pot, add the chicken tenderloins, juice of the limes, salsa, broth, Goya, pepper, garlic powder, smoked paprika and 3 tbsp of the taco seasoning. Cook on low for 3 hours.
Step 2
Shred the chicken using two forks. Stir shredded chicken to recover with juices, cover, and cook 1 additional hour
Step 3
Add remaining taco seasoning to the sour cream, stir well to mix. Smear sour cream mixture to cover one side of the burrito tortilla. Sprinkle the shredded cheese over the sour cream, then add the shredded chicken to just one half of the tortilla. Fold the tortilla closed to make the quesadilla, and place it in a warmed pan. Heat on one side until cheese is melted and the tortilla is gently browned, then flip to brown the other side.
Step 4
Remove from pan and immediately cut quesadilla into four pieces. Serve with guacamole and pico de gallo.
