Instructions
Step 1
Bring 4 cups of water to a boil in a large saucepan. Add potatoes and apples. Reduce heat to a simmer and cook, covered, until tender, about 20 minutes.
Step 2
Drain and transfer potatoes and apples to a large bowl. Toss with 2 tablespoons olive oil, salt and pepper.
Step 3
Preheat oven to 177°C. Grease a large baking dish with olive oil and add potatoes and apples.

Sprinkle chicken with salt, pepper, thyme, and parsley; drizzle with remaining olive oil.
Step 5
Add the chicken to baking dish and bake until cooked through, about 30 minutes.
