Step 1
Mix the spices in a medium bowl. Heat olive oil on med-high in a Dutch oven till just smoking. Add chickpeas and cook till deep golden brown and crisp, 12-15min. Remove from oil with a slotted spoon to a paper-towel lined plate. Drain briefly and then toss with spices. Can be stored at room temp for up to 24 hours (if you can manage not to eat them all in the first few minutes, that is!)
