Fish Brochettes
Brochettes, likely introduced by the Belgians, are sometimes called the national dish of Rwanda. In Rwanda, fish and chicken are more expensive than beef and goat, so many locals prefer the latter. But you can find these delicious fish brochettes in most bars in Kigali, and I really liked them a lot.

Instructions
Step 1
Place the haddock, pepper chunks and onion wedges onto skewers.
Step 2
To make the marinade, grate 2 medium plum tomatoes and combine with 1 teaspoon vegetable oil, the juice of 2 limes, the juice of 1 lemon, and salt and pepper.
Step 3
Pour the marinade into a large ziplock bag and add the skewers. Let sit, on a baking tray in the fridge, for 2 hours
Step 4
Cook the skewers on an oiled grill, flat top or pan for 10-12 minutes, turning once or twice to make sure all sides of the fish and veg get nicely charred.
