Instructions

Step 1
Place a medium to large pan of water for the pasta onto the hob and bring to the boil.

Prepare your ingredients

Thinly slice the chorizo, chop the red onion and red chilli into small chunks. Slice the handful of plum tomatoes in half and finely chop the parsley.

Crush the garlic with the back of your knife and finely chop.

Get cooking

Step 4
Add the sliced chorizo, chopped red onion and red chilli and the sliced plum tomatoes to the pan on a high heat. Allow to cook for 2-3 minutes.
Step 5
Add the chopped garlic to the frying pan and cook for a further minute.
Step 6
Once the water is boiling cook your pasta as per packaging instructions. We prefer fresh paste cooked for 4 minutes!
Step 7
Add the tin of chopped tomatoes to your pan with 100ml of water. Allow to simmer whilst the pasta cooks.
Step 8
Once the pasta is cooked spoon it into your sauce with a slotted spoon.
Step 9
Crumble the mozzarella and stir into your combined sauce and pasta. Allow to cook for a further 1-2 minutes to melt.

Time to enjoy!

Sprinkle with chopped parsley and serve!
