Step 1
Rinse and cook rice according to preferred method. Keep separated from main pot.

Step 2
Add butter to pan over medium low heat. Add onion, carrot and celery. Cook vegetables until just starting to soften.
Cast Iron Pot
Step 3
Pull chicken from rotisserie and place in the pan with olive oil (this is optional but the veggies soaked up the butter for me). Turn up heat to medium medium-high. Once the chicken has begun to brown ass seasonings to let them bloom a bit. Add garlic and let simmer for a minute or two.
Step 4
Add the broth and parsley, bring to a simmer. Let everything get to know each other for about 30 minutes minimum. Add dill before serving.
Step 5
Serve up soup by combining rice and broth to keep rice from overcooking
