Instructions
The vegetable broth
Step 1
Prepare your oven by setting it on broil
OvenHeat
Step 2
Put half of the ginger aside as well as some of the coriander and the green part or your spring onions
Step 3
Cut all the remaining vegetables in half, or large chuncks (keep the skin on the onions)
Step 4
Set all of the pieces on a plate that can go in the oven, sprinkle some salt, pepper and oil and broil untils ths ingredients start to carbonise (just a little, they should not turn completely black)

Put your vegetables in a pot, and fill with water to about 1.5 the height of the vegetables
Step 6
Bring to a boil and then right back down to a simmer
Step 7
Let it simmer for 4h (refill with water if needed, don't let the broth go dry)

Strain the broth
-note that is you try to make the straining process by pressing on your vegetables, it will make the broth cloudy, this is your call
The noodles

I don't know how to make noodles from scratch, i buy them already made 😢
The ramen broth

Peel and cut the ginger half you put aside into very small pieces (I even strait un grate it sometimes)
Step 11
Pour some sesame oil in a pot, add the ginger and fry it until dark golden
Step 12
At this point you can remove the ginger and only keep the oil.
Note : this process aims as adding flavour to the oils
-The recovered ginger can be used as toping
Step 13
Set the pot to medium/low heat, and add one spoon of miso paste
Step 14
Add some of your broth and stir gently until the miso paste is completely disolved
Step 15
Repeat the process until you have the desired amount of ramen broth
Note:
-adjust the amount of miso you use to your taste
-if you miso has bits in it, do not hesitate to strain the broth to get rid of those, though it is not mandatory
