Instructions
Step 1
1️⃣Firstly, roughly slice the onion into chunks and add to a large oven proof pot with oil to fry for 4-5 minutes until softening and going slightly charred
Step 2
2️⃣Meanwhile roughly chop the garlic and peel and chop the sweet potato into small cubes
Step 3
3️⃣Now add the garlic + spices and stir then add the sweet potato + drained chickpeas + coconut milk + 1/4 can water + stock cube + peanut butter and stir
Step 4
4️⃣Once simmering transfer to the oven and bake at 200C (fan oven) for 30 minutes
Step 5
5️⃣Meanwhile boil rice to serve with the curry
