Instructions

Step 1
Heat oil over medium low heat in pan
Step 2
Add vegetables, red chili flakes, and garlic, coating and mixing thoroughly
Step 3
Cover and allow to steam / sauté for ~5 min
Step 4
Add coconut milk, spices
Step 5
Cover and raise heat to bring to a brief boil
Step 6
Lower heat and stir occasionally removing the lid to thicken curry base
Step 7
Once vegetables are soft and sauce is thickened, serve with parsley over rice!
