Instructions
Step 1
Thinly slice courgettes and aubergine (half moons). Rough chop peppers and onion.
Step 2
Preheat oven to 180°
Step 3
Mix veg, garlic, oil, salt, pepper, and basil in roasting tin/dish. Top with tin tomatoes.
Step 4
Roast for 30 mins
Step 5
Increase heat to 200°, stir veg, add breadcrumbs and parmesan, roast for another 30 mins.
