Ingredients

100gchorizo
2 Tbspolive oil
15gbutter
1red onion
chopped
1red pepper
diced
1chili
seeded and chopped
4garlic cloves
chopped
1 tspsalt
½ tspblack pepper
½ tsporegano
¼ tspground coriander
1 tsppaprika
1 tspcumin seeds
400gcan black beans
400gcan chopped tomatoes
70gbaby spinach leaves
4tortillas
4eggs
50gmozzarella
1 tspchili flakes
coriander

Instructions
Step 1
Preheat oven at 180ºC.
Step 2
In a frying pan, heat up the olive oil and fry the chorizo for 5min.
Step 3
Reduce the heat to medium-low, remove a couple of tablespoons of the chorizo onto a plate, and add the butter, the finely chopped onions, sliced peppers, chili, garlic, salt and pepper to the pan.
Cook for about 5 minutes, until softened, stirring occasionally.
Step 4
Add the cumin seeds, oregano, paprika, ground coriander, stir and cook for 3 min.
Step 5
Add the content of the tomato can and cook for 5 min, add the black beans and cook for another 3 min.
Stir through the baby spinach for 1 minute or until just wilted
Step 6
Brush up a cooking tray with olive oil and cover up with the tortillas, overlapping each other and leaving them protruding out of the tray
Step 7
Pour in the tomato and bean mix, create some wells and fill each one them with the cracked eggs.
Step 8
Top it with the cheese, sprinkle the chili pepper, salt and pepper.
Step 9
Cook in the oven for 15 min, until eggs are cooked to your taste.
Step 10
Take out the oven and sprinkle with more coriander and reserved chorizo. Serve.
