Instructions
Step 1
Boil kettle. Heat large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over high heat. Cut tomatoes roughly.
Step 2
Once hot add diced chicken thigh with ras el hanout and cook for 3 min.
Step 3
While chicken is cooking dissolve chicken stock mix in 200ml (400ml) boiled water.
Step 4
Add couscous to a heatproof bowl and pour over the chicken stock. Cover with a tea towel and set aside to soften until serving.
Step 5
Add roasted garlic paste to pan with tomato frito, diced apricots, sultanas, chopped tomatoes, and 100ml (200ml) boiled water. Bring to the boil and cook for 3-4 min.
Step 6
Fluff couscous with a fork. Serve with flaked almonds
