Homemade granola makes a delicious, nourishing and filling breakfast. Plus it's so budget-friendly! Serve on top of breakfast smoothie bowls, top with coconut yoghurt and fruit or simply add dairy-free milk.

Step 1
Preheat oven to 180°C/360°F and line a large flat baking tray with parchment paper
Step 2
In a large bowl combine the oats, seeds, cinnamon and salt and combine with a spoon. Remember to leave out the dried fruit, these will be added at the end.
Step 3
Combine the wet ingredients (melted coconut oil, maple syrup and vanilla extract) into a jug. Mix to combine.
Step 4
Pour the wet ingredients from the jag into the bowl and combine with the oat and seed mix to coat it so they are nice and glossy.
Step 5
Spoon the granola mixture into your prepared baking tray and press into the mix to form an even tight layer. Pop in the oven and cook for 20-25 minutes.
Step 6
Important! Remove from the oven and allow granola (untouched) in the pan to cool for 45 minutes. This is what makes the granola stick together and break into large crunchy bits.
Step 7
If adding dried fruit, combine once the granola has cooled and store in a large glass container in the pantry. Stays fresh for 4 weeks.
