Step 1
preheat oven to 375 degrees F.
Step 2
spray a muffin pan with nonstick spray.
Step 3
whisk together the egg whites, milk, salt and pepper in a medium bowl.
Step 4
add about 1/4 cup of the egg mixture into each of the 12 muffin cups.
Step 5
after chopping up the vegetables into small pieces, evenly divide between the muffin cups. do the same with the shredded cheese.
Step 6
gently mix each muffin cup with a fork.
Step 7
bake uncovered for about 20 minutes or until golden brown to your liking.
Step 8
