Step 3
Add the curry paste, coconut milk and kaffir lime leaves to the pan and simmer for 5 minutes until reduced slightly. Add veges and simmer for a while. Add tofu along with the sugar snaps, baby sweetcorn, bamboo shoot and green beans, and simmer for 5 minutes until the vegetables are tender.







Step 4
Add lime juice and coriander, then serve with rice.
