A new take on an old favorite. Use 2 skewers for the okra to prevent them from spinning when turning to grill the second side. Each serving is 1 Lean, 3 Green and 3 Condiments.

Instructions

Step 1
Cook cauliflower rice according to directions.
Step 2
Meanwhile thread sausage, shrimp, bell pepper, onion, and okra on separate skewers. Drizzle with oil, and sprinkle with 1/2 t Cajun seasoning and 1/2 t celery seed.
Step 3
Grill tomato halves and vegetables approximately 10 min turning frequently
Step 4
Grill sausage and shrimp approximately 5 min until shrimp is opaque, turning frequently.
Step 5
Chop tomato and mix with “rice”, remaining Cajun seasoning and celery seed.
Step 6
To serve, place 1/2 of the “rice” on a serving plate. Top with 1/2 of the shrimp, sausage and vegetables.
