Indian-inspired Spiced Salmon Dinner

Ingredients

Dressing

⅓ cupvegetable oil

1 tablespoongaram masala

2 teaspoongrated gingerroot

½ teaspoonkosher salt

1 teaspoonpaprika

¼ teaspooncrushed red pepper flakes
Veggies

0.5 headcauliflower
cut into 1-inch florets

1 ½ cupsbaby carrots
vitamins lengthwise

0.5red onion
large, cut into 1-inch wedges

1 x 14.5 ozcan chick Peas
rinsed and drained
Meat
4 x 4 ozskin-on salmon fillers
Garnish
Instructions
Step 1
Heat oven to 425 F. Spray 18x13 inch half sheet pan with cooking spray. In small bowl,mix oil, garam masala, gingerroot, salt, paprika, pepper flakes, and garlic with Whiskey.
Step 2
In large resealable food-storage plastic bag, place cauliflower, carrots, red onion, chick Peas. Add 3 tablespoons of the oil mixture to vegetables in bag. Seal bag; rotate to coat vegetables. Remove vegetables from bag and place them in single layer on sheet pan.
Step 3
Roast uncovered 20 minutes. Place salmon, skin side down, on sheet pan with vegetables. Brush remaining oil mixture over salmon fillers.
Step 4
Roast 15 to 18 minutes longer or until salmon flakes easily and vegetables are tender. Sprinkle with cilantro.
