Taco Stuffed Zucchini Boats

Ingredients

1 poundzucchini
medium

2 tspolive oil

1 clovegarlic
minced

10 ounceslean ground turkey

¼ tspchili powder

⅛ tsponion powder

⅛ tsporegano

½ tspcumin

½ tspsmoked paprika

⅛ tspsalt

½ cupdiced tomatoes
3 ounces2% reduced fat shredded cheddar cheese

Instructions
Step 1
Preheat oven to 375*F.
Step 2
Place olive oil in a skillet over medium heat.
Step 3
Slice the zucchini in half lengthwise and carefully scoop out some of the insides all the way down the center.
Step 4
Chop the part you scooped out and place it in the skillet along with the minced garlic and cook until tender.
Step 5
Place the four boats in a baking dish.
Step 6
Add the ground turkey to the skillet and cook until it is no longer pink.
Step 7
Once the turkey is browned, add the seasonings, Rotel tomatoes and 2 ounces (1/2 cup) of cheese. Stir until the cheese is melted.
Step 8
Fill the zucchini boats with equal amounts of filling. Bake for 20 minutes. Sprinkle the remaining ounce of cheese evenly over the top and bake 10 minutes longer.
Step 9
In did make slightly different. Put zucchini in pan after if is halved and scooped. Pre bake 10 minutes then add taco filling and cheese. Bake again 10 minutes.
