Mix the batterIn a bowl, mix the self-raising flour (50g) with water (100ml), white wine vinegar (2 tsp), and a pinch of salt. The batter should have the consistency of double cream to coat the beans generously.

Adjust with water or flour if necessary.

Let the batter rest until it begins to bubble (approximately 20 minutes).

Make your Sichuan seasoned saltGrind or blend salt (5 tsp), Sichuan peppercorns (1/2 tsp), and a pinch of Five Spice powder (optional). Stir-fry the mixture in a dry wok without oil until fragrant (about 1 minute).Tip: This makes more than enough seasoned salt. Save leftovers for chips!

Deep Fry the Beans

Heat sufficient oil in a pan.

Coat the trimmed French beans in the batter and fry until golden brown.

Stir-Fry Together

In a wok, stir-fry the chili, spring onion, and garlic on medium heat until aromatic.

Add the fried French beans and 2 tsp of the Sichuan seasoned salt.

Toss for 30 seconds before serving.
