Instructions
Step 1
Place potato in a saucepan of salted cold water, bring to the boil and simmer for 8 minutes and drain.
Step 2
Preheat grill.
Step 3
Meanwhile, heat a small frypan over medium heat, add bacon, onion and mushrooms and sauté, stirring occasionally, for 5 minutes. Stir through potatoes.
Step 4
Reduce heat and stir through tomatoes and spinach until wilted.
Step 5
Whisk eggs, cheese and parsley, season with salt and pepper and pour over vegetables. Continue to cook for 8 minutes until base has set.
Step 6
Transfer to grill and cook for a few minutes until set and beginning to brown.
Step 7
Divide between two plates and serve with salad leaves tossed with vinegar and seasoned with salt and pepper.
