Step 1
Heat a small amount of butter in a small pan.
Step 2
In a small mixing bowl, whisk together eggs, fish sauce, salt, and pepper.
Add in spinach and gently mix.
Step 3
Pour mixture into the heated pan, and cook until there is a thin layer of uncooked egg on top. Flip and cook until the egg is done.
Step 4
Transfer to a plate, sprinkle green onions, and enjoy!
Step 5
Note: You can also add mushrooms, tomatoes, or other asian greens.
