These are some of my favorite tacos ever! You can find achiote paste in the Mexican aisle of most grocery stores or on Amazon.

Instructions

Step 1
Soak guajillo chiles in boiling water for 10 minutes.
Step 2
•Drain chilies and add to a blender with the rest of the marinade ingredients. Blend until smooth.
Step 3
•Place the sliced pork in a large bowl and pour in the marinade. Mix well until all of the pork is coated. Cover and marinate in the fridge for at least 2 hours, preferably overnight.
Step 4
•Preheat the oven to 350 degrees and line a baking sheet with foil.
Step 5
•Place one pineapple round in the middle of the baking sheet and stick the 2 wooden skewers through the core. Push the slices of pork through the skewer, layering them on top of the pineapple. If you have any smaller pieces of meat, place them towards the top. Top with a second pineapple round.
Step 6
•Bake for 2 hours or until the meat in the middle registers 145 degrees. Rotate 2-3 times for even browning. Dice any remaining pineapple.
Step 7
•Rest for 10 minutes then carve off thin slices of pork.
Step 8
•Optional- fry the meat in a skillet until browned and crispy.
Step 9
•Serve on warm tortillas with the roasted pineapple, onions, cilantro and lime wedges.
