Pipian Verde | Juicy Chicken Breast

Pipian Verde is a flavorful Latin American prehispanic sauce made with pumpkin seeds, sesame seeds, vegetables (onions, tomatoes, tomatillos, chiles, etc.), herbs, and spices. It is served with poultry, meat, seafood, or vegetables. The recipe below is my variation with chicken breast cooked in pipian verde whole and sliced for serving with it as a sauce.

Instructions

for pipian

Step 1
Heat the skillet over medium heat and toast raw pepitas (pumpkin seeds) until puffed. Stir and toss constantly.
Step 2
Dice onions and saute in avocado oil over medium heat until sweet and fragrant.
Step 3
Combine all ingredients for the pipan in a blender jar and process until smooth for about 2 minutes.
Step 4
Transfer the sauce to a saucepan large enough to fit the chicken breasts. Cook the sauce over medium heat until it thickens, stirring, for about 5 minutes.
Step 5
Submerge two raw chicken breasts into the sauce, bring it to a simmer, and cook over low heat until ready.
Step 6
If using shrimp or fish, season it with salt and cook over low heat until ready, for about 5-10 minutes, depending on size.
Step 7
Remove chicken breasts from the sauce and slice them. Return the pipian into the blender jar and process until smooth. Pour a portion into the serving plate and arrange the chicken slices. Top with puffed pumpkin seeds and cilantro leaves. Serve with corn tortillas, rice, or beans.
