5tomatoes
diced
½ cuponion
1 Tbspgarlic
¼ cupoil
1 Tbsptomato paste
1 Tbspblack pepper
1 Tbspcumin
1 Tbsporegano
1 Tbsppaprika
1 tspsugar
1 tspsalt
1 tspchili flakes
1 cupwater

Instructions
Step 1
Put diced tomatoes in a pan oven medium heat for 5 min. Add the rest of the ingredients except the chicken. Simmer for 10 min. Set aside and let it cool.
Step 2
Place the sauce in a food processor.
Step 3
Add 1 cup of th sauce to the chredded chicken.
Step 4
In a tortilla, add the chredded chicken, onions, mozzarella and cheddar cheese.
Step 5
Add sauce to the bottom of the tray. Place the enchiladas and top it of with the rest of the sauce. Top it of with mozzarella and cheddar cheese.
Step 6
Bake at 200c for 15 min.
For preparing chredded chicken
Step 7
After immersion, Put 2 tbsp of oil onto a pot at 7 and put the chicken on both sides of the oil and put the remaining liquid from the chicken on top too
Step 8
Reduce heat to 3 and put lid
Step 9
After 15 min see if they are soft
Step 10
Chredded the chicken with fork
