Instructions
Step 1
Preheat oven to 180 degrees Celsius. Steam sweet potato for 8 minutes until soft.

Step 2
Heat a frying pan with olive oil then sautee green peas and capsicum until softened, then remove from heat.



Step 3
Whisk eggs, add cheese, salt, pepper, paprika, sweet potato, shredded spinach and sauteed vegetables, combine well. Line a baking dish with baking paper, then pour mixture into a baking dish and cook for 20-25 minutes until cooked through.






Step 4
Serve frittata with 1 slice of wholegrain toast.
