Mixed bean ratatouille

Delicious classic ratatouille with added beans for a more filling protein-packed dish. The type of beans used can be varied if you have a preference, e.g. cannellini beans, borlotti beans or butter beans all work well.

Instructions
Step 1
Heat the oil in a large pan or casserole dish and add the diced onions. Fry the onions on a medium heat for 5 minutes then add the garlic. Stir the onion and garlic and continue to fry for a further 3-4 minutes until soft.
Step 2
Add diced pepper and tomato puree, stir, then continue to fry for 3-4 minutes.
Step 3
Add the diced aubergine and courgette to the pan and stir, combining all the ingredients and cook for another 2-3 minutes.
Step 4
Add the can of mixed beans (drain off any water from the beans) and add the can of chopped tomatoes, along with the tomato juice, to the pan.
Step 5
Stir in the dried oregano and bay leaf, then cover the pan and leave to cook on a low heat for 15-20 minutes.
Step 6
Serve in a bowl with bread if preferred.
