1. Sauté onions in pan with olive oil. Add ground beef and garlic, and cook through.
2. Set ground beef aside. I only have one pan, so I put the ground beef in a bowl to wait while I cook the veggies.
3. Add more oil to pan and throw in zucchini to start cooking. Add the spices to your liking. I didn't measure these at all. I filled my palm up twice with the oregano and rosemary, and once with the basil. 4. Once zucchini is partially cooked, add bell pepper, tomatoes, and tomato paste. Cook for a bit, then add ground beef back into the pan and add spinach. Cook until spinach is wilted. 5. Ladle portions into bowls, top with shredded cheese, and serve with hot flatbread.
