Instructions
Step 1
Heat up oil then add onion and chilli, cook until softened.
Step 2
Add diced chicken and sprinkle with garlic granules and cover chicken with cajun seasoning.
Step 3
Boil kettle. Once boiled add a stock cube to a mug and fill it up with boiling water. Stir.
Step 4
Once chicken has turned white on both sides push to the edges of the pan.
Step 5
Add the flour to the space in the middle of the pan and whisk in the mug of chicken stock. Keep whisking only in the centre of the pan until lump free.
Step 6
Now stir everything together.
Step 7
Add the sliced peppers ontop of the chicken and add lid to pan to steam them.
Step 8
Once chicken has fully cooked stir in the cheese, Greek yogurt, cream, salt, pepper and extra cajun if needed.
Step 9
Grab another pan and add about a ladle worth of crêpe mixture to pan and cook.
Step 10
Lay the crepe on plate add cajun chicken mixture up the centre of the crêpe. Fold both sides over.
Step 11
Add a sprinkle of cheese over the crêpe and smother in cajun sauce.
Step 12
Dollop greek yogurt ontop of the crêpe with parsley and chilli flakes. Serve
