Instructions
Step 1
Preheat oven to 200C

Step 2
Finely chop or crush pistachios. Combine pistachio and salt on plate.
Step 3
Lightly score the lamb fat in 1cm criss-cross pattern. Season the lamb w/ salt and pepper.
Step 4
Finely chop garlic and add to bowl with Dijon mustard.
Step 5
Place lamb fat side down in large frying pan. Bring pan to medium heat and cook lamb undisturbed until golden (10-12 mins)
Step 6
Increase heat to high then sear lamb on all sides for 30 seconds each.
Step 7
Add lamb to bowl of Dijon and garlic. Turn to coat. Press pistachio all over sides.
Step 8
Transfer lamb, fat side up onto a lined baking tray and set aside.
Step 9
Cut potato into bite sized chunks, transfer to an oven tray, drizzle with olive oil and season with salt.
Step 10
Roast potato on top oven rack for 25-30 minutes.
Step 11
Place carrots on tray with lamb and drizzle with oil and honey. Season w/ salt and pepper and toss to coat.
Step 12
Roast lamb and carrots for 15-20 minutes. Then transfer lamb to plate to rest for 10 minutes.
Step 13
Pan fry baby broccoli with a bit of water.
Step 14
Top lamb with chimichurri sauce and serve.
