Ingredients
6 servings
4zucchini
small, shredded
2yellow squash
small, shredded
3scallions
diced
2 Tbspherbs de provence
1 tsptarragon
1 ½ tspsalt
½ tspblack pepper
1 ⅔ cupswhole wheat white flour
2 Tbspchia seeds
½ cupwater
12 spraysolive oil cooking spray
1 ½ cupoat milk yogurt
plain unsweetened
1cucumber
small, grated
⅓ cupfresh dill
chopped
0.5lemon
large, zested and squeezed for juice
¾ tspsalt
¼ tspblack pepper
Instructions
Step 1
Preheat oven to 400
Combine chia seeds and water and set aside to gel.
Combine zucchini, squash, scallions, herbs de provence, tarragon, salt, pepper, flour and some of the lemon zest, and geled chia mixture and mix well.
Place in refridgerator for 30-60 minutes
Line baking sheet with parchment paper and spray lightly with cooking spray.
Form 12 patties and place in oven. Cook for 20-25 minutes then lightly spray tops with cooking spray then place back in oven for another 20-25 minutes or until they are the consistancy you prefer. For the saurce:
Combine all other ingredient and keep chilled until ready to serve
