Instructions
Step 1
Blend the pine nuts, basil, sun-dried tomatoes, 2 tbsp olive oil, and nutritional yeast.
Step 2
To a pot on low to medium heat, add 1 tsp of oil and the onions. Cook for 3 minutes until translucent. Add the garlic and cool for 1 minute
Step 3
Add the orzo, pesto, chickpeas and vegetable broth. Cook for 10 minutes, stirring regularly to prevent sticking.
Step 4
Add the soy milk and broccolini, and cook for 5 minutes. Stirring regularly.
Step 5
Add the Kale, and cook until just wilted. Adjust salt & pepper, and enjoy!
